Coconut fruit has been processed to produce a lot of coconut products such as coconut milk, coconut oil, and many
more. The residu of the process was coconut fiber that could only end up as cattle feed with a very low price.
Recently, the coconut fiber has been modified to become powder, with high cellulose content and relatively low fat.
The components of the powder of coconut fiber such as protein, fat, and cellulose are some of important components
for physiological process in human body. Freeze drying method was used to modify coconut fiber into its powder
form, because the sublimation process in the freeze dryer has maintained the taste, the flavor, the color, and the
structure of the fiber. The drying process has been varied into several times, 18 hours, 22 hours, 24 hours, 42 hours,
46 hours, and 48 hours. The nutrition content resulted from analyzing of the coconut fiber shows that the drying
process for 18 to 24 hours has 0,33% water content, 37,1% cellulose, 12,0% fat and 4,12% protein.
